Armenian Traditional Tolma

Hello everyone! Today we will prepare our traditional Armenian tolma, which is always a staple of our holiday tables.

I use the following ingredients to make it:

  • 1.5 kg of beef
  • 250 g fatty pork (sal)
  • 2 onions
  • 1.5 cups of rice
  • grape leaf
  • Cabbage
  • salt to taste
  • red and black pepper to taste
  • tomato paste to taste
  • red pepper paste to taste
  • garlic powder to taste
  • basil to taste
  • parsley to taste
  • coriander to taste
  • dried black plums to taste

We will remove the core of the cabbage, boil it for 1-2 minutes and separate the leaves. We will sprinkle it with cold water, we will put it in a strainer, after which we can start wrapping it. It should be cooked for 1 hour and 15 minutes.
