Beef fillet (tenderloin) with rosemary chocolate sauce

A wonderful, beautiful and tasty dish for dinner. “Beef Fillet with Rosemary Chocolate Sauce” Ingredients preparation time: 10 minutes, cooking time: 20 minutes, total time we lost is 30 minutes. To prepare two portions, we need:

Recipe:

  • 1/2 tsp ground pepper
  • 2 tsp fresh rosemary (rosemary) ground
  • 1/2 tsp mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 140g 2 pieces of sliced fillet
  • 1 tbsp olive oil
  • 3/4 cup of good quality wine
  • 1/4 cup beef broth
  • 1 tsp finely ground rosemary
  • 1/2 tbsp balsamic vinegar
  • 20 g dark organic 85% dark chocolate
  • 1 tsp butter
  • salt and pepper to taste
  • rosemary for garnish
  • Parsley for garnish

Procedure: Steak

1. Preheat oven to 400 F.

  1. In a small bowl, mix pepper, rosemary, mustard, garlic and salt. Then use your fingers to season both sides of the fillet with seasoning.
  2. Pour the oil into the cast-iron pan so that it does not stick to the bottom during frying and is rust-free. Heat over medium-high heat. Add the beef fillets and sear on both sides until golden brown, about 3 minutes per side.
  3. Transfer the pan to the gas burner and cook until an instant-read thermometer reads 125 F, meaning the meat should reach 52 C or 125 F.

Sauce:

While the steaks are cooking in the oven, add the beef broth, wine, and rosemary that we cooked the steaks in to the skillet and raise the heat to medium-high. Cook until it becomes a light syrup.

Remove from heat and stir in balsamic vinegar, chocolate, butter, salt and pepper.

Remove steaks from oven and transfer to serving plates. Drizzle with chocolate sauce and garnish with a slice of meat and fresh rosemary or parsley.Subscribe to us on YouTube, Facebook and  Instagram!
