New Year Holiday Cake: “Eghevni”

Today we present to you a wonderful festive cake, which I named “Eghevni” cake. For this cake, I use a classic biscuit recipe, the method of preparation of which is very simple and accessible to everyone. And I think most of us will like it.

Preparation process

Put the egg and sugar in a bowl. These two should be mixed well together until it turns white, thickens, and quadruples in mass. One of the secrets of the biscuit is that the eggs and sugar are well beaten and combined.

If these two are not well mixed and particles of sugar and egg remain, then the dough will not rise well. Here, following details and order is very important.

When the mass is ready, we will add vanilla and beat it a little more. Then we will sift flour and baking powder on it. We have to mix it by moving it from the bottom to the top so that the air does not come out. We will put it in pre-prepared pans and put both layers together in the oven. It should be cooked for 35-40 minutes, under 350F or 180C.

Dough:

Ingredients for 1 layer, which should be divided into 2 parts.

  • 5 eggs
  • 1 cup (200 g) of sugar
  • 1 cup (260g) of flour
  • 9 g of vanilla
  • 0.5 t/g of soda
  • 1 tsp baking powder

The dough should be cooked in 2 layers and divide each into two parts.

Cream:

  • 300 g of butter
  • 2 cans of condensed milk
  • 1 egg
  • 2 tbsp corn starch

Buttercream:

  • 680 g of powdered sugar
  • 450 g of butter
  • 1-2 tablespoons of cream milk – as needed
  • a pinch of salt
  • 9 g of vanilla
  • food coloring or for a natural version, “matcha,” green tea powder
  • 12 – ice cream cone

If you want to use this cream completely in the cake, then it is completely enough. And if you are going to use it with cream with condensed milk, then the portion should be reduced by half. If using the whole cream, separate a small part to give color.
