Carrot cake

We present to you a great recipe from S & A, which is extremely tasty and interesting, not repeated.

Dough recipe:

  • 2 cups of flour
  • 2 tsp of baking soda
  • 2 tsp cinnamon
  • 1 tsp of salt
  • 4 egg
  • 2 1/4 cups sugar
  • 1 cup of vegetable oil
  • 1 glass of milk + lemon juice 1 tsp
  • 1 tsp vanilla
  • 3 medium carrots, shredded (3 cups)
  • 1 cup of chopped roasted walnuts
  • 1 cup shredded coconut
  • 1 chopped pineapple (30 g)

I Pre-heat the oven to 350 F, take 2 round pans with a diameter of 23 cm, cut parchment paper the size of the pan, and spray it with cooking oil.


For the ingredients of the cake, we will take a medium-sized bowl, pour the dry ingredients into it: flour, soda, cinnamon and 1 tsp of salt. Mix well. Pass through a sieve.


Break the eggs in a large bowl and mix well, add sugar, oil, 1 cup of milk + 1 teaspoon of lemon juice, 1 teaspoon of vanilla. Mix until well combined. Add flour mixture, mix add carrots, 1 cup walnuts, coconut and pineapple. Mix until well mixed. Pour the batter into the prepared pans. Bake for 30 minutes, remove from the oven and let cool for 10 minutes, then separate the greaseproof paper.

Cream:

  • 2 packages of softened cream cheese (cottage cheese)
  • 1 cup softened butter
  • 1 pinch of salt
  • 3 cups of powdered sugar
  • 1 tbsp orange juice
  • 2 tsp grated. orange peel
  • 1 tsp vanilla
  • 2 cups of chopped walnuts, fried, divided
