Armenian traditional layered gatha

Hello everyone! Today we will show you how to make traditional Armenian gata from puff pastry. It turns out very crisp with its folds and beautiful with its reddish color.

Dough:

  • 2 cups of lukewarm water
  • 3 egg yolks
  • 1 whole egg
  • 0.5 g/g of lemon salt
  • a pinch of salt
  • 1 tsp vegetable oil
  • 2 tsp vinegar or lemon juice
  • 4 cups of flour (with a 220 ml cup, with which we measured the water)
  • 500 g of butter or margarine

While kneading the dough, if it sticks to the hands, we will add a little flour. We will divide the dough into 4 equal balls and by hitting each ball on the table 40 to 50 times, we will knead it well so that the dough is saturated with oxygen. When opening for the first time, we will put 125 g of butter in the dough, close it and cover it with food film, let it rest for 30 minutes. We have to open and close the dough 3 times, after that, after resting for 1 hour in the refrigerator, we can open it and place the chorizo for baking. The oven temperature should be 350 F and it should cook for 45 to 50 minutes.

Chorizo:

  • 150-200g of butter
  • 1 cup of sugar
  • 1.5 cups of flour
  • 1 tsp vanilla
  • 1 tsp cognac or rum

When opening the dough, we will apply egg white on it with the help of a brush, after which we will place the crust.
