Cake with “Snickers” mousse

Dough:

  • 70 g of flour
  • 4 g of baking powder
  • 20 g of cocoa
  • 1 pinch of salt
  • 2 eggs
  • 80 g of sugar
  • 1 tsp vanilla
  • 40 ml of milk
  • 30 ml of olive oil

It should be cooked in a pan with a radius of 20 cm for 20-25 minutes. The oven temperature should be 170 C or 355 F.

  • 8 g of gelatin
  • 50 ml water (cold)

Mix together, leave for 10 minutes

Prepare cottage cheese mousse in a separate pot

  • 2 egg yolks
  • 60 g of sugar
  • 160 ml of milk

Mix these three ingredients together, put them on low heat of the gas stove until the temperature reaches 82°. Turn off the gas stove, add cottage cheese.

  • 200 g of cream cheese
  • 1 tsp vanilla
  • 200 ml heavy cream 33-35%

add the prepared gelatin in the pot, mix quickly until the temperature drops to 35°, add vanilla and a separate shot of milk cream. Whisk together until smooth. Pour it into the prepared container and leave it in the freezer for 2 hours.

Stuffed with caramel sauce and peanuts.

  • 280 g of caramel sauce
  • 200 g of peanuts
  • 4 g of gelatin
  • 30 ml of water

Of course, we prepare the gelatin first, let it rest for 10 minutes, during which we prepare the caramel mixture with peanuts. Which should be poured over the mousse made with cottage cheese and put in the freezer for an hour.

Chocolate sauce

  • 14 g of gelatin
  • 80 ml of water
  • 4 egg yolks
  • 60 g of sugar
  • 200 ml of milk
  • 100 ml cream 33-35%
  • 240 g of dark chocolate
  • 600 g of 33-35% heavy cream

Glaze:

  • 230 g of sugar
  • 125 ml of water
  • 12 g of gelatin
  • 72 ml of water
  • 150g of dark chocolate
  • 65 ml heavy cream 33-35%
  • 30 g of cocoa

Pass the glaze through a sieve twice while still warm.
