First we will prepare the dough:
Dough:
- 3 eggs
- 0.5 g/g of salt
- 260g of sugar
- 60 g of cocoa
- 3 tbsp of honey
- 120g of butter
- 1 tsp of soda
- 1 tsp baking powder
- 350 g of flour
We will divide the dough into 9 equal parts, put it in the refrigerator to rest for 1 hour. Preheat the gas stove to 350 F and cook for 6 to 7 minutes. The size of the item is 22 cm.
Cream – recipe:՝
- 300 ml of milk
- 1 egg
- 40 g of starch
- 230 g of sugar
- 100 g sour cream
- 80 g of butter
- 250g of cream
The process of making the cream.
Beat the egg well, add sugar, starch and sour cream with milk. It should be well beaten until we get a homogeneous mass, we will put it on the low flame of the gas stove and mix it constantly. When it is ready, we will immediately take it off the gas stove and let it cool down. And in the meantime, we will beat the butter, when it turns white, we will add it to the cooked, frozen cream. After that, we will whip the cream and add it to the total mass.
Glaze:
- 4 tsp cocoa
- 6 tablespoons of sugar
- 1 measuring cup of milk
- 30 g of butter
- 1 tsp brandy
- 0.5 t/g of olive oil
Preparation:
We will mix cocoa and sugar together, add milk. We will put it on the low flame of the gas stove, we will stir it until it thickens and the mass is homogeneous. We will add butter to it, after 2-3 minutes we will take it off the gas stove, we will add cognac and olive oil. After that we can decorate our cake “Spartak”.
