For the dough:

• 6 egg yolks
• 130 g sugar
• 100 – 120g butter
• 100 ml milk
• 2 tbsp honey
• 230 g flour
• 2 tbsp cocoa
• 1 tsp baking soda
• 2 tsp baking powder

For the egg foam

• 6 egg whites
• a pinch of salt
• 250 g sugar

Chocolate Ganache

• 4 tbsp sugar
• 4 tbsp sour cream
• 2 tbsp milk
• 4 tbsp cocoa
• 30 g butter
• 1 tsp cognac to taste
