Kataifi Variety

Happy holidays everyone! Today let’s make Kataifi for our holiday tables.

To prepare this wonderful type of baklava, the first thing you need is the dough, which can also be bought. We will take the dough out of the freezer in advance and put it in the refrigerator for 8-10 hours for the dough to thaw. After which we will open the dough in the opposite direction. The dough should be kneaded like wool. We will pour melted butter or oil on the dough, and if we want our sweet dough to be a little lighter, we can replace a small part of the melted butter with vegetable oil. To prepare the filling, you need to grind the walnuts.

Dough:

  • 450g of dough
  • 200g of melted butter
  • 50 ml vegetable oil

Kataifi Dough Recipe From Scratch

  • 200 g of flour (2 cups)
  • 1 cup (160g) corn starch
  • 1 pinch of salt
  • 4 tbsp vegetable oil
  • 2 cups (About 450 ml) of water

Sift the dry ingredients together. After mixing well with vegetable oil and water, stir with a blender so that there are no lumps. Let it rest for 10-15 minutes and you can pass it through a sieve to make sure there are no lumps left.

You can pour it into a piping bag or a bottle. If you are making it for the first time, make 1 hole on the lid. It works quickly with 3-5 holes. Grease the pan and heat it. Pour the dough in a circular motion. As soon as the edge of the dough rises like a pancake, remove it from the heat. Place on a towel to cool

Filling:

  • 300 g of walnuts
  • 1 tsp cinnamon
  • 0.5 tsp of cloves
  • 1-2 cardamom seeds if you like

Syrup

  • 400g of sugar
  • 700 ml of water
  • 1 lemon slice or 1 tsp juice

Bake the dough at 350 F for 40 minutes until golden.

In the video, I also presented various ways of serving. The baking time and process of preparing the ingredients is the same. In total, I used two packages of Kataifi, each package was 450g.
