Lemon Cake

Hello Everyone… Today we are going to make a lemon cake. We will present you all the necessary components below.

Dough:

  • 70 g sugar
  • 1 lemon zest
  • 30 ml vegetable oil
  • 30g softened butter
  • 1 egg
  • 30 ml milk mixed with little less than 0.5 tsp white vinegar
  • 1 tsp baking powder
  • 1 pinch of salt
  • 80 g all-purpose flour

Lemon Curd

  • 2 eggs
  • 100 g sugar
  • lemon zest from 2 lemons
  • 80 ml fresh lemon juice (from the 3 lemons used)
  • 30 g butter

Mix all this and put it on boiling water. It must be stirred constantly until the water mass condenses, then we’ll transfer it to the table, add 30 g of butter. Mix well to incorporate and leave it to cool.

White Chocolate Cream Cheese Filling

  • 1 tsp gelatin mixed with 2 tbsp cold water, leave for 5 min
  • 150 g white chocolate
  • 3 tbsp heavy cream
    • melt the chocolate with the heavy cream, then add the gelatin. Mix well and set it aside
  • 370 g cream cheese
  • 2 tbsp powdered sugar
  • 1 tsp vanilla
  • 160 ml heavy cream (40%)
