Traditional Armenian bread – Flatbread “Matnakash”

Today we will make our traditional bread, the Matnakash.

Yeast.

  • 1 dessert spoon = 2 tsp dry yeast
  • 1 dessert spoon sugar
  • 200 g of flour
  • 1 cup of lukewarm water


Dough

  • 1 kg of flour
  • 25 g of salt
  • 200 ml of vegetable oil
  • about 1.5-2 glasses of water


Soaking:

  • 1-2 eggs
  • 2 tbsp lukewarm water
  • 1 tbsp vegetable oil

Method of preparation.

In a small bowl, add dessert spoon of dry yeast and same amount of sugar, mix together and add 1 cup of lukewarm water. Cover the bowl with plastic food wrap, and make 1-2 small holes on it so that the carbon dioxide gases can come out. Set it aside for 15 to 20 minutes.

Dough making process:

In a bowl, I will take about 2 cups of flour from 1 kg of flour, I will sift it in a bowl beforehand and put the prepared yeast on it, we will mix it well, then will add salt, and the lukewarm water, mix again by kneading the dough. Add the vegetable oil, continue kneading, add the rest of the flour. We should get a soft elastic and tender dough. We should cover the dough and leave it for 2 to 3 hours. After that we will open the dough and knead for the second time. We will wait for the dough to rise again, after which we will divide it into 3 big balls. We will spread vegetable oil on it, cover it with a food layer and leave it for another 15 minutes, after which we can form our tender, elastic dough.

Before baking the bread, we will cover with the egg mixture. Then put a parchment paper on the baking sheet then place the shaped doughs. The oven should be preheated. Bake at 500 F or 260 C for about 15 minutes.
