- 1 cup olive oil
- 5 garlic cloves, very finely chopped
- 1 onion
- 0,5 -1 tsp ground turmeric
- 12 packed cups fresh spinach(12 oz.) roughly chopped
- 1tsp black pepper
- 1 1/4 tsp kosher salt, divided
- 4 eggs
- 1/3 cup chopped toasted walnuts
- 2oz. feta cheese, crumbled(about 1/4 cup)
- Heat the olive oil in a pan until it starts to shimmer. Add the onion and cook, stirring occasionally, until the onion is golden and soft, 10-12 minutes. Stir in the garlic and turmeric.
- Cook, stirring often, until fragrant, about 1 minute. Separate 1/4 of the fried onion and add it at the moment of serving, and leave the rest in the pan.Put spinach, pepper and 1 tsp of salt in the pan. Cook, stirring occasionally, until spinach is wilted and darkens in color, about 4 minutes.
- In the pan, create 4 evenly spaced wells on the spinach mixture. Crack 1 whole egg on each one, add the remaining 1/4 tsp of salt. Cover and reduce heat. Cook for 5-7 minutes until the egg feels cooked.
