Puff pastry – Gata

Hello everyone! Dear followers, today we will bake Gata, a puff pastry. The recipe of which is represented below:

Preparation of filling, “Khoriz”:

  • 100 g butter
  • 250 g sugar
  • 300-350g flour
  • 1 pack of vanilla or 1 tsp vanilla extract

The dough making process

  • 2 egg yolks
  • 2 tsp salt
  • 2 tsp citric acid
  • 2 cups of lukewarm water
  • 600g flour
  • 125-130 g softened butter for each dough balls

Mix 2 egg yolks, salt, citric acid, 2 cups of lukewarm water, flour and mix well. Knead until you get a soft, elastic dough that does not stick to your hands. Divide the dough into 3 equal balls, cover with a plastic food wrap. Leave for 1 hour, after which cover the table with flour, open the balls with hands, place 125 g-130 g of softened butter, and cover again. Leave to rest for 45 minutes. We will open and close each of the balls 3 times. If we do not want to bake, we can immediately put them in plastic food bags, and keep them in the freezer as much as we want.

For the surface of the dough

  • 1 egg yolk
  • 1 tsp vegetable oil
  • 1 tsp milk
  • 3 egg whites to cover the dough before putting the filling
