Spelt and mushroom pilaf

Hello everyone. Today we are going to make pilaf with mushrooms and spelt. Here are the ingredients that we will use


Recipe:

  • 2 cups of spelt grain
  • 5 cups of water
  • 1 white onion
  • 500g mushrooms
  • 60 ml Olive oil
  • 50 g butter
  • 1tbsp salt for the spelt and 1tsp salt for mushrooms
  • 1 tsp black pepper

I soaked the spelt grain for an hour and washed it. I also washed the mushrooms and peeled the skin, which is up to your preference. Afterwards I chopped all the ingredients into to small pieces.

Heat up the butter with 10ml olive oil, then add the spelt and roast it for few minutes and pour in 5 cups of water. Add the 1 tbsp of salt and let it cook for 10-15 minutes. Meanwhile, chop the onion and mushrooms. On a large skillet pour the rest of the olive oil. Then add the onions, once they start getting caramelized add the mushrooms. Season it with salt and pepper. Mix well, and let it cook for about 10 minutes, until the mushroom shrink and the water comes out. Afterwards mix the spelt and the mushroom mixture together and cook for another 15 minutes.
