Sponge Cake With Honey – Medovik

Hello everyone! Today we are going to make a sponge cake with honey, also known as Medovik, which is made very quickly and has a great taste. We have another version on the site, which is made of puff pastry, it is just as tasty. Now let’s take a look at the recipe.

For the dough:

  • 220 g butter
  • 4 tbsp honey
  • 2 tsp baking soda
  • 4 eggs
  • 200 g sugar
  • 9g Vanilla or to taste
  • 300-400g flour

Cream:

  • 500 ml heavy cream 40%
  • 200 g powdered sugar
  • 700 g sour cream 27%

Syrup:

  • 80 g powdered sugar
  • 1 tbsp liqueur or cognac
  • 1 tsp vanilla or to taste

The total baking time is 15 minutes. I used a 35 cm x 40 cm baking sheet and covered the base with parchment paper. Bake under 350F (177C). And lastly divide the cake into two equal halves, then separate each layer into two pieces as well, making a total of 4 layers. You can watch all the details in the video below.
