Ground lamb leg tenderloin. With Gremolata

Hello everyone! Today we present to you a wonderful dish on the occasion of the holidays, which is a very tasty and ideal option.

Recipe:

  • 1/4 cup olive oil
  • 3 tbsp finely chopped rosemary leaves
  • 4 cloves of crushed garlic
  • 1 tbsp paprika
  • 1 tsp of salt
  • 1 tsp black pepper
  • 1 lemon juice
  • 2.5 kg lamb leg tenderloin

    Gremolata (sauce)
  • 1 cup of chopped parsley
  • lemon juice
  • 1 clove of chopped garlic
  • ½ tsp salt
  • ¼ cup olive oil, plus extra for garnish

Prepare the lamb. In a large bowl or zip-top bag, combine the oil, rosemary, garlic, paprika, salt, pepper and lemon juice. Mix well. Add the lamb tenderloin and marinate, leave for 1 night in the refrigerator.

Preheat oven to 350 F and broil on high. Remove the lamb from the marinade and place it on the grill on all sides. 40 to 50 minutes, then transfer to a baking sheet and roast in the oven. The temperature of the oven should be between 145-150 F. It should remain for 20-25 minutes. Take the lamb tenderloin out of the oven and let it rest.
Prepare the Gremolata (Sauce). Mix all the ingredients.

Slice the cooked lamb meat, pour gremolata sauce and olive oil on each piece. This portion is made for 8 to 12 people. Enjoy the S & A recipe.
