Armenian flatbread “Matnakash”

Hello everyone! Today we will make Matnakash bread, which is the traditional bread with a favorite taste of all of us. First of all, we will make artificial yeast.

Yeast:

  • 1 tbsp dry yeast
  • 1 tbsp sugar
  • 1 cup of lukewarm water

Dough՝

  • 7 cups flour
  • 1 tbsp salt
  • 200 ml vegetable oil
  • 1,5 cup lukewarm water

Preparation method:

Sift the flour into a bowl, make a hole in the middle and add a handful of salt, pre-made yeast. Knead well by hand, add vegetable oil and little by little lukewarm water. And we should get a soft elastic dough. First we will knead the dough very well by hand, then we will continue kneading the dough by hitting it on the table until it turns, soft and elastic. We will put vegetable oil on the walls of the bowl, put the dough in it, cover it with a plastic food wrap, the dough should be ready in 3 to 4 hours. After the dough rises for the first time, knead it well, cover it and let it rise for the second time.

The stove should be preheated to 500 F or 260 C, the baking time is 15 minutes.
